Polish Sauerkraut Soup

He is off travelling for business on Monday.

“I will cook you posniacki, so that you will think of home and me when you are in the US,” I told him as we ate breakfast on this beautiful Saturday morning in January.

“Posniacki?” He looked alarmed. “Are you sure?”

“Of course!”

“Bosnian people? You will cook Bosnian people?” He stared at me incredulously.

“No, silly, sauerkraut soup!”

“Oh, KAPUŚNIAK!” He exclaimed. “Honestly, you’re the limit!”

Anyway, here’s the Polish sauerkraut soup. One problem is we cannot get Polish sauerkraut in central London, only German ones, as most Polish stores are in the suburbs. Still, it didn’t taste too bad as I used homemade beef stock. Here’s my version:

INGREDIENTS:

  1. ½ rack of pork ribs
  2. 6 slices of thick smoked bacon, roughly chopped
  3. Pork meatballs
  4. 1 jar sauerkraut
  5. 1 large onion, chopped
  6. 2 potatoes, cubed
  7. 2 carrots, sliced
  8. 2 pints good quality beef stock (if you can’t be bothered to make this, but it fresh from Waitrose or local butcher’s)
  9. Butter
  10. ½ tsp majoram
  11. ½ tsp caraway seeds
  12. 4 bay leaves
  13. 1 tsp all-spice
  14. Pinch of sugar
  15. Salt and pepper

INSTRUCTIONS:

  1. Cut ribs into single bones and season with salt and pepper. Fry in butter to seal the taste but not burnt.
  2. Add stock and the spices and simmer until tender (approx. 90 minutes).
  3. Whilst this is simmering, saute the bacon and onion in butter.
  4. Pour the bacon and onion (including the fat) into the pot with ribs.
  5. Add the sauerkraut.
  6. 20 minutes before serving, add the potatoes and carrots and simmer on low heat.
  7. Serve piping hot.

(Note: I also added some wild mushrooms in).

Whilst it’s simmering away, have some vodka (chilled in the freezer) to get into the mood.

Note on sauerkraut: Polish ones are different. I will make some soon. Must speak to mama first. But today, I used German ones which are more vinegary – so rinse first if you like a milder taste.

Chicken Soup (for the soul)

The best dish in the world is chicken soup made by someone you love especially for you. I had quite forgotten the magic of this simple soup that nourishes the soul until someone who loves me made it for me a week ago. He said, with a wry smile, there are seven jewels of Asia in it.

I paid if forward today and made it for someone I love deeply. I can’t quite figure out all the seven jewels of Asia, but here’s my version:

  1. 1 organic chicken quarter (I used chicken breast)
  2. 10 red Chinese dates
  3. A quarter cupful of goji berries
  4. A fee shitake mushrooms
  5. 3 cloves garlic, roughly smashed
  6. 3/4 inch ginger
  7. 1 chilli (or less)
  8. Szechuan peppercorns
  9. Bok choi
  10. For garnish: fresh flat leaf parsley
  11. For garnish: spring onions
  12. Salt and pepper

Boil everything except the boy choitogether (I boiled mine for 2 hours, with a dash of cider vinegar). In the last 2 minutes before serving, add the book choi. Season and garnish. Serve with love ❤

(I love the delicate flavour of this version, as opposed to my usual more hearty one)

Classic Stroganoff

I went for dinner at my dear friend Alan Thatcher’s, and it seems sublime that we were sat in his English garden on Phuket island eating this traditional fare from home.  I literally licked the bowl clean and recreated it (without Alan’s pizzazz, of course) two days later.

Here it is:

  1. 500g fillet steak (this recipe works equally well with pork)
  2. 1 cup good quality beef stock
  3. 1 large Spanish onion (sliced)
  4. 4 cloves garlic (chopped)
  5. 1 cup mushrooms (quartered)
  6. 50ml sour cream
  7. 1 cup brandy
  8. Pinch of paprika
  9. Juice of 1 lemon
  10. Knob of butter
  11. Salt & pepper to taste

(I added frozen peas whilst Alan used sliced carrots).

  • Sear the meat in butter. You must sear the meat.
  • When browned (about 30 seconds in a hot pan) add the onion and garlic. Saute until both are soft.
  • Add the mushrooms and stir for a minute or so.
  • Add the rest of the ingredients EXCEPT the sour cream.
  • Bring to boil until you get a thickish gravy.
  • Add the sour cream, stir in until thoroughly mixed.  If you are adding frozen peas, now is a good time. Cook on low heat for 10 minutes, adjusting the consistency.
  • Season generously.

Delicious with pasta or boiled rice. My kids loved this!

Quinoa and dates energy balls

Quinoa is one of those amazing food that is gluten-free, high in protein and is also one of the few plant foods that contain all nine essential amino acids. I normally cook a pot and use it as salad base.

But last week, I decided to make energy balls with my red quinoa.

Ingredients:

1 cup cooked quinoa (cook according to packet instructions)
1 cup rolled oats
1/2 cup sliced almonds and 1/2 cup sunflower seeds
5 teaspoons honey
10 pitted dates
¼ cup almond butter
1 tablespoon virgin coconut oil
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon grated nutmeg
⅛ teaspoon sea salt
A handful of raisins
1 tablespoon chia seeds

Method:

Heat the oven to 350°. Mix together the quinoa, oats and sunflower seeds with the honey, coating them evenly. Pour into a baking tray lined with parchment paper and bake until brown and crunchy (around 20 minutes), stirring once or twice so that they brown all over.  Cool.

Toast the almonds.

Combine the dates, almond butter, coconut oil, vanilla, cinnamon, nutmeg, and salt in a blender and blend until smooth. Pour into a large bowl. Add the almonds, chia seeds, and toasted quinoa and oats. Mix well with your hands and shape into balls (this recipe makes about 24).

Store in an airtight container for up to one week.

Best-ever ragu

My long-time friend, Toni de Coninck, from Belgium came over for a whirlwind visit.

He is a fellow foodie and we met ten years ago at Gourmand World Cookbook Awards where my cookbook, The Kundalini Yoga Cookbook, was a finalist. Toni says, “Too bad I don’t have time to cook my ragu for you.”

We all have our heirloom ragu recipe – mine has marmite.  Toni’s different.  But however different, homemade ragu always tastes nothing like the sweet, sticky goo you get if you make it with mass-produced sauce.

He sent me his recipe. Here it is, in his own words.

The secret is time. Time and a decent red wine. First you fry your sofrito in olive oil: 1 chopped carrot, 1 branch of celery, 1 large onion or 2 big shallots. Finely chopped, fry until the onion looks glazed.

I most commonly use 50/50 minced veal and minced pork. Now some people add the meat to the sofrito in this stage, but I fry it in a separate pan so the meat can fry golden brown and in somewhat larger chunks. I find this important because it gives more substance to the later sauce.

Season the meat with black pepper, salt, herbes provencales and if you can find it sweet paprika or pimenton de la vera.

If fried, add the meat to the sofrito, put the whole thing under red wine (half a bottle will do) and bring to a boiling point until all the alcohol has evaporated.

Then add stock or water and 1 large tin of tomato paste or Spanish tomato frito. Put it to simmer, and let it simmer slowly for 3 or 4 hours until it all comes together.

Now, commonly I would use linguine or tagliatelle and it is important to add the sauce to the pasta before serving, so it kinda clings itself to the starch.

Only use freshly grated parmigiana and drink it away with the rest of the red wine.

Georgina’s Gnocchi with sage and garlic butter

Gnocchi is so expensive in Asia, though it is made of nothing more than flour and potatoes. My daughter made this, and it was absolutely delicious. That’s with some modification to the traditional recipe (we added some pumpkin because we didn’t have enough potatoes).

INGREDIENTS:

Two cups of diced potato and pumpkin (she used 3/4 potato to 1/4 pumpkin)
2 cups of all-purpose flour
1 egg
Salt and pepper

For the butter:

1/2 a cup of butter
5/6 cloves garlic
A sprinkling of dried sage (or chopped fresh ones)

Boil the diced potato and pumpkin until tender (but still firm). This would take about 15-20 minutes. Mash them up and all the other ingredients. Roll the dough out into tubes and cut the tubes into bite-size portions.

Bring a large pot of lightly salted water to a boil. Drop in gnocchi and cook for 3 to 5 minutes or until gnocchi have risen to the top; drain and serve.

In the meantime, melt the butter in a small pan. Saute the garlic until soft but not browned. Add the sage. Pour over the gnocchi.

Food From My Childhood – Apple Turnover Cake

Cake, cake, cake. More blooming cakes. I should rename this blog Cake A Day blog. But hey, it’s all tied up with my childhood programming – my mum loves cakes.

So here’s another one.  But aha, this one is 100% gluten free. I used banana flour. And it tastes better than I expected (after several tries).

Ingredients:

20g butter

6 large apples, peeled, cored and cut onto eighths

1 1/4 cup banana flour

2 tsp baking powder

Pinch of salt

3/4 tsp ground cinnamon or mixed spice

3/4 cups caster sugar

1 cup oil

1 cup full cream milk

2 large organic eggs

2 large egg yolks from organic eggs

zest from 1 orange

Preheat oven t0 180C. Grease the baking tin. Line the baking tin with the apple slices.

Beat butter and sugar until light and fluffy. Mixed the dry ingredients together – sieve into the butter-sugar mix. Slowly fold in the liquid ingredients.

Pour the mixture in.  Bake until it’s all nice and brown, and the fork comes out clean when poked into the cake.

Garlic & Onion Mash with Sun-dried Tomatoes

This is almost a meal in itself, inspired by the Welsh Colcannon. Try it, and you won’t be disappointed!

Boil some potatoes until soft.

In the meantime, sauté sliced onions and garlic cloves (halved) until browned.

When the potatoes are soft, mash with lots of butter and a swirl of cream.

Add in the onions, garlic and sun-dried tomatoes.

Season to taste.

Press into a baking tin and bake until crispy on top.

The Simple Steamed Vegetables

Dining table battles have been fought over the generations between exasperated parents and mutinous children about eating veggies.  What is it about veggies that some children absolutely loathe? Parents often resort to innovative methods such as ‘hiding’ veggies in meat or disguising the taste with lots of sauces or adding them to smoothies. Hmmm.

Here’s the thing: there is nothing like the goodness of lightly steamed vegetables.

Steaming vegetables preserves its nutrients, especially the water-soluble ones. Just steam lightly, to preserve the enzymes, too. Indulge yourself by adding a large dollop of butter to your steamed veggies.

Yes it is plain, yes it is bland, yes it is boring,  when pitted against kiddies’ favourites such as bolognaise or the ubiquitous shop-bought tomato ketchup. But I think it is good to teach children to enjoy the simple things, to be conscious of the subtle, and it starts with the tastebuds. Food does affect consciousness and behaviour. All part of awakened living ❤

Creamy Chicken & Capers

Food is cultural and has very deep roots.  I am into Soul Food because my mother brought me up on Soul Food (otherwise known as boring British food) and even now, at 47, whenever I feel battered and bruised by the world, I would curl up with some comfort food and hark back to those safe childhood days.

In my teens and twenties, my cooking evolved to embrace French (I went to a finishing school) and Italian (I am quarter italian) influences.  My twenties and thirties were largely dominated by nursery food as I struggled to feed my growing family on a shoestring and time-deficits. Lately, I have been exploring German food. This was taught to me by my German neighbour in Jakarta, and here it is, with some adaptation.

How to:

Boil organic chicken in water until par cooked (about 30 minutes). Remove from heat and shred the meat.  Reserve the stock. Saute some onions, button mushrooms and carrot chunks.  Add in the shredded meat. Pour cream into the mixture, add the reserved chicken stock until the liquid resembles a soup. Add a small jar of capers and its water.  Simmer until the liquid is reduced to think creamy consistency. Season to taste.

Served with potatoes and steamed vegetables, with a good dollop of butter. The ultimate comfort food ❤
